Boston Cream Poke Cake

There are few things that I enjoy more than cake! This one is hard to beat with cake, pudding, and chocolate ganache! Here’s what you'll need to try it out yourself.

For the cake:
1 box- Yellow cake mix and the ingredients to prepare it according to package directions. Mine called for 1 cup of water, 1/3 cup of oil, and 3 eggs
For the pudding:
2 boxes of instant vanilla pudding mix
4 cups milk
1 tsp. vanilla extract
For the ganache:
1 1/2 cups heavy cream
4 Tbsp. butter
1 -12 oz package of chocolate chops
1 tsp. vanilla extract
Prepare the cake using a 13 x 9" pan according to package directions and let cool. Poke holes all over the cake with the end of a wooden spoon. In a bowl, combine milk, pudding mix, and 1 tsp. vanilla extract and pour directly over the cake, filling the holes you created. Refrigerate for about an hour. Pour chocolate chips into a heatproof bowl. In a saucepan, heat heavy cream, butter, and remaining vanilla extract over medium-low heat until hot and just forming small bubbles around the edge, stirring often. Pour the cream mixture over the chocolate chips and let sit for about 2 minutes to allow the chocolate to begin to melt. Stir the chocolate mixture until completely melted and smooth. Allow the ganache to cool for about 10 minutes, then pour over the cooled cake. Refrigerate for at least 4 hours or overnight before serving. Enjoy!!
