Green Chile Cheese Ball

Cheese balls are very easy to make and are always a favorite at home or at parties. There are so many different variations based on what you enjoy. You could use a variety or blend of cheeses and other ingredients to complement your meal or event. This recipe is for a green chile cheese ball. I was born and raised in New Mexico and green chile is one of those things that we always have in the freezer. I look forward to fall each year, when it is time for the harvest and the smell of fresh roasted chile fills the air.

Ingredients:

1 - 8 oz block of cream cheese, softened

4 tbsp. butter softened

1 package ranch dressing seasoning mix

1 cup finely shredded cheddar cheese

1/2 cup chopped green chile

1 cup chopped walnuts (or other nuts of your choice)


To Make:

Place cream cheese, butter, and ranch seasoning mix in a bowl. Stir ingredients together until well combined.


Add shredded cheese and green chile and mix until they are incorporated into the cream cheese mixture.


Place the mixture on a large piece of plastic wrap and use the wrap to shape the mixture into a ball.


Roll the ball in the chopped walnuts.


The cheeseball can be served immediately or you can wrap it in plastic wrap or place it in a sealed container to chill and serve later. If chilled, allow the cheese ball to sit at room temperature for 10-15 minutes before serving. Serve with your favorite fruits, vegetables, chips, toasted bread, or crackers. Enjoy!
