Cream Cheese Cookies

Ingredients:

1 cup butter, softened

1- 8 oz. package of cream cheese, softened

3 cups powdered sugar

4 cups all-purpose flour

2 eggs

1 tsp. baking powder

1/2 tsp. salt

2 tsp. vanilla

Extra powdered sugar for dusting


Preheat the oven to 375 degrees Fahrenheit. Prepare cookie sheets with parchment paper, and set them aside. Combine dry ingredients in a bowl and set aside. In a large mixing bowl, combine softened butter and cream cheese and combine with the mixer until smooth and creamy. Add eggs, vanilla, and powdered sugar and mix until combined completely. Add dry ingredients and mix just until combined. I used a small cookie scoop for this recipe and made some of them by just scooping dough onto cookie sheets and baking them as is. I also made smoother dough balls with some of them by rolling them in my hands and pressing them lightly on the pan. Both methods baked up nicely and were equally delicious! Bake on the center rack at 375 degrees Fahrenheit for 10 minutes. Remove from oven and sprinkle with powdered sugar. Cool and enjoy! This recipe yielded 60 cookies using my small cookie scoop.
