Cheesy Summer Squash Casserole

5 cups summer squash diced
1 can cream of mushroom soup
1/2 cup sour cream
2 cups shredded cheddar cheese
1 tbsp chopped garlic
1 tsp salt
1 tsp pepper
1 cup seasoned bread crumbs
2 tbsp butter melted
Preheat oven to 350 degrees Fahrenheit. Prepare a 9 x 13 pan with non-stick cooking spray. Dice summer squash into bite-sized pieces. Par boil squash for 3 minutes, then drain. Mix cream of mushroom soup, sour cream, cheddar cheese, garlic, salt, and pepper in a large mixing bowl. Add squash and mix together. Pour the squash mixture into the prepared pan and spread evenly. Melt butter and combine with bread crumbs. Sprinkle bread crumbs over squash. Bake for 25-30 minutes. Enjoy!
