Carrot Cake with Cream Cheese Frosting

Cake
2 cups all-purpose flour
2 Tbsp cinnamon
2 cups sugar
2 tsp baking soda
1 tsp allspice
1 cup vegetable oil
4 eggs
3 cups grated carrots
1 cup chopped walnuts
Frosting
2 lb bag of powdered sugar
1 cup butter, softened
2 - 8 oz cream cheese, softened
2 tsp vanilla extract
CAKE: Preheat the oven to 350 degrees Fahrenheit. Grease and flour 2- 8 inch cake pans. Combine dry ingredients in mixer bowl. Add oil and eggs and mix together until combined. Add carrots and nuts and mix until combined. Bake for 35-45 minutes or until a toothpick inserted into the center of the cake comes out clean. Remove from oven and cool.
FROSTING: Combine butter, cream cheese, and vanilla extract in the mixer bowl. Mix until smooth and creamy for about 2 minutes. Add powdered sugar and mix until smooth for about 5 minutes. Spread on cooled cake and decorate with additional chopped walnuts as desired. Enjoy!
